Hey guys, Doctor Axe here, Doctor of Functional Medicine-Nutritionist. Today I'm going to talk to you about one nature's number one super foods, and that is liver, both beef liver, chicken liver, duck liver. But the liver of animals is actually very high in nutrients and this actually surprises some people. You may have seen some of the articles I've written on the health benefits of super-foods like kale and spinach, and I think when we typically think of super-foods we think of green leafy vegetables, or a tropical super berry from the Amazon, or some other form of a super-food like chia or flax seeds, even wild caught salmon. But most people don't think of liver, especially something like beef liver, but I'm here to tell you that liver is the most nutrient dense super-food on the planet. And in this video I'm going to talk about the many benefits of liver, how to consume it in your diet, and how to overcome the taste both from a food perspective, as well as I'll talk about a supplement here that actually works very well that you can take in place of actually eating the raw liver itself. But liver has actually been used extensively by doctors of natural medicine for years, and in fact the medical doctor Max Gerson, he was a German scientist created something called the Gerson Protocol, or Gerson Therapy. And the Gerson therapy was a natural cancer treatment protocol that was used for every type of disease as well as digestive disorders, tuberculosis, heart disease. And what Max Gerson had his patients do, is he had them consume 13 glasses of vegetable juice a day and consume beef liver, along with doing coffee enemas, and some raw vegetable salads as well. But beef liver was part of his primary protocol in helping his patients heal. The reason why liver is one of the number one super-foods today and one of the number one healing foods is it is your highest source of B Vitamins and Iron and Vitamin A. It's higher than any other food, in fact if you compare it to spinach, to carrots, to an apple, to some of nature's richest foods, it outperforms all of them. And probably, the number one benefit of consuming liver is that it is very high in Vitamin B12, and we know Vitamin B12 supports red blood cell formation, it helps improve cellular function, it's important for so many things. So again, your number one source by far in the world of Vitamin B12 is consuming beef liver. Now one of the questions I often times get "Well, isn't your liver toxic, because doesn't your liver deal with toxins?" Well liver, your liver, toxins are not stored in your liver. This is why it is important though when you're buying liver, whether you're buying liver at your farmer's market, or you're buying it in supplement form that you're getting it from organic pasture-raised liver, especially calves liver is the best, and chicken liver. You want to make sure they're grass fed, free range, pasture raised when you are consuming liver. But again, liver is very high in Vitamin B12, it's high in Vitamin B6, it's also high in Biotin, and it's high in Folate. Those B Vitamins especially Folate help your body with something called methylation as well as cellular function. So it really supports your body's detoxification pathways, and it kind of makes sense that actually consuming liver actually helps your liver function better, it actually gives your body and your liver all the nutrients you need in order to detoxify properly. Also liver is packed with Vitamin A and Iron, if you struggle with any type of anemia, this is probably the best food to consume in the world, because it contains Folate, iron, and Vitamin B12. The three vitamins and minerals that you need in order to overcome anemia naturally. If you struggle with low energy, fatigue, neurological issues, again, Max Gerson used it in the treatment of cancer patients. Liver is something you may want to add into your diet, and let me kind of go over how I personally eat liver. The most common way is, I will consume chicken liver pate. And chicken liver actually tastes absolutely delicious, in fact, I was at a really well known gourmet restaurant in Salt Lake City recently, and they actually had a duck liver pate which is one of the best things I've ever had. I know in Nashville here where I'm from, we have a local European restaurant that actually does a chicken liver pate, but it's a very easy recipe where you can do liver, chicken liver with honey, with some onions and other things like garlic, and it tastes absolutely amazing on something like cucumber or sourdough bread. But again, getting some good liver in your diet, chicken liver pate, number one recipe I recommend you try. Number two, putting some chicken liver in a, let's say, like a chicken bean soup. You could do white beans and chicken, throw some liver in there, and you really won't taste it, it adds a little bit of a good flavor in there as well. Now, beef liver unfortunately doesn't taste as good as chicken liver, and you can do that in a couple of different ways. One is you could throw it in a blender and down it, or number two you could cook up beef liver and consume it with loads of onions and flavorings. So you cook it just like you would a steak, as you're going to saute it well, you're going to cover it in garlics and onions and consume it that way, and it's actually pretty tasty if you consume it, small bites of it, along with a steak. But for those of you who don't want to venture into the world of eating raw beef liver, or chicken liver pate, I recommend you take a quality liver supplement.
