Description
Pungent red onions are nutritional wonders, containing three different groups of health-enhancing compounds: thiosulfinates, fructans, and flavonoids. ARS scientists in Madison, Wisconsin, are working to develop onions that are milder in taste but still chock-full of heart-healthy nutrients.
